The French chef’s (“monsú” for “monsieur“) pantry (“dispensa“) makes for fine food in a casual setting. This cheese shop expanded to serve hot seasonal dishes like Piombini pasta balls with pureed fava, lentils with lardo di Colonnata, baked cheese. Or sample local cheeses like ricotta with pistaschios, caprino Robiola (goat cheese), piacentu ennese (saffron-peppercorn), pecorino “ubriaco” (wine-aged) plus Sicilian prosciutto and salami. Fortunately wine is in the “pantry,” too.
